Throughout history, bakeries have been important establishments in cities around the world. As modern manufacturing took over, the local baker became a rare species.
Large restaurants groups have also stopped baking their own breads in many cases because the process is too time consuming. As a result, establishments that still have in-house bakeries produce noticeably better food, and have a competitive advantage. For example, Thomas Keller’s world renowned French Laundry and Per Se are supplied by his Bouchon Bakery.
With the opening of Le District in Brookfield Place, Battery Park now has its own bakery. We filmed a tour of it with the two head bakers, Lisa Kirschner and Jeremy Rousselet.
