Back in 2012, out of necessity, I baked myself some chocolate chip and walnut cookies because the fancy French bakeries were botching this American Classic so much. I had not baked anything before, but the instructions seemed simple enough. I had some beginner’s luck and people raved about them.
Then, I started to make bad batches that were too soft and seemed unbaked. I had no idea why. Three years a later, and thousands of cookies later, I have a pretty good feel for the variables and what can go wrong (e.g. the leavener is key).
I was watching PBS tonight and caught this comment. It made me feel better. Even the experts consider cookies to be the hardest thing to bake.
